How do I change the label of a Grand Total in Tableau Server
Server version has limited formatting options.
You can do that in Desktop only, where totals formatting is available (https://kb.tableau.com/articles/howto/renaming-grand-total-header).

Filter across dashboard components
You can use a common filter for multiple worksheets. On dashboard just show the filter from any of contained worksheets, and that will work for all of them.

Across_then_down calculation works fine with row grand totals.

Go to context menu right clicking to the dimension field.
Go to Aliases... and change the labels.

Finally solved the issue.
You should go to:
Data –> your_data_source –> Edit Aliases –> Measure Names
And see full mapping between variables/aggregations and aliases.
